Vegan "Tuna" Salad Sandwich

Spring is in the air and picnic sandwiches are in demand!  I found a great recipe in one of my favorite recipe books, Skinny Bitch In the Kitch. I often do not follow it to a tee... as is the case for most any salad making. Fix it to your liking!


Ingredients:

2 cups finely shredded parsnip
1 celery stalk, finely diced
1/4 small red or white onion, finely diced
1 lemon
1/4 cup vegan mayonnaise
1/2 tablespoon sweet pickle relish
1 teaspoon coarse nutritional  yeast
1/2 teaspoon kelp powder
1/4 teaspoon fine sea salt
6 to 8 slices vegan whole wheat bread
 (lettuce or spinach, if bread isn't your thing, with chopped tomatoes) 

In a large bowl combine parsnip, celery, and onion.  Zest, then halve the lemon.  Add zest and juice from one half of the lemon (save the other half for another use) to parsnip mixture, along with the mayo, relish, yeast, kelp powder and salt, stirring to combine.
Spread the salad on bread for sandwiches or over a bed of lettuce or spinach.
