Fast Cookies for School Lunches
Even though Oreos are technically vegan I wanted to find a healthier cookie to pack in my children's lunch boxes. Lo and behold I found this recipe while flipping through the Forks Over Knives cookbook. It's super easy and true to it's title, fast!

Ingredients:
2/3 cup maple syrup
2/3 cup almond milk
1/2 cup cocoa powder
6 tablespoons peanut butter
2 teaspoons vanilla
3 cups oats
1/2 cup walnuts (optional)
Directions:
In a medium saucepan, whisk together the maple syrup, almond milk and cocoa powder.
Bring to a boil.
Stir while simmering for three minutes.
Add peanut butter, stirring until blended.
Take off heat.
Add vanilla and oats, stir to combine.
Drop tablespoon sized cookies onto waxed paper.
Store in airtight container.
