Brown Rice, Lentil & Zucchini Patties
These patties came together on a whim to use up the cooked lentils and half a zucchini hanging out in the fridge. The zucchini was leftover from the Zucchini Sandwich Cookies we made which were oh so good! Next time I'm doubling the recipe, they went way too fast...
These patties were originally intended for sweet lil' baby Isla but turns out the whole fam damily loved them! The lentils with rice make a complete protein and the zucchini adds a nice punch of vitamin C, A, B6, folate, potasium and manganese. I also added wheat germ, which provides folic acid, phosphorus, magnesium, zinc, vitamin E and thiamin. I always feel like Supermom when I provide such great foods for my family and Super-er-mom when they like it!
Here it is!
Ingredients:
1 1/2 cups cooked lentils (cooked in veggie broth)
1 1/2 cups cooked brown rice (cooked in veggie broth)
1 1/2 cups grated zucchini
1/4 cup wheat germ
A couple tbsp of olive oil
Directions:
Mix all the ingredients except olive oil
Form into patties
Heat oil in skillet over med-high heat
Place patties in skillet
Cook 5-7 minutes each side or until browned and crispy on the outside
Serve with a side of steamed veggies
