Quinoa, Black Bean & Sweet Potato Cakes

 
By now you've probably noticed I'm on a bit of a patty/cake kick. I just can't get over how easy they are, how much they make, and how much my sweet vegan baby loves them! It helps me sleep better at night when I know she's getting what she needs. Quinoa is one of my favorite grains because of its protein content. Quinoa is also a good source of iron and calcium, perfect for vegans! Of course we also love sweet potatoes for their super food qualities, providing us with vitamins A and C, foliate, iron, copper and calcium as well. Black beans add to the protein of course and provide many of the B vitamins. We love that right? So here's what we made last night for dinner. 
 
Ingredients:
 
1 small onion, diced fine
2 cloves garlic, minced
1 teaspoon cumin
olive oil
1 cup cooked quinoa (cooked in veggie broth)
1 cup cooked sweet potato
1 can black beans, drained and rinsed
1/8 cup bread crumbs
1/8 cup ground flax seed
 
Directions:
 
Saute the onion and garlic in a tablespoon of olive oil until soft
Add the cumin and cook a minute or two longer
In a large bowl mash the onion mixture with the quinoa, sweet potato, black beans, bread crumbs and flax meal
Form into patties
Cook in a lightly oiled skillet until both sides are browned
Serve as is for baby, for you put it in a wrap with some avocado, and fresh spinach. Yum!

*note* It seems most veggie patties tend to come out a little mushy in the middle. I'm working on some that will be less mushy (try adding oats?) but for now I really like these, they make a perfect finger food for a baby.
