Vegan Pumpkin Bread

 
Ghosts, ghouls, and goblins alike will love this vegan pumpkin bread. Might I add even carnivorous monsters will go batty over this! Autumn treat for after school? Sweet addition to your Halloween party? Lazy Sunday morning breakfast in bed? How will you enjoy your vegan pumpkin bread?
 
Ingredients:
 
2 cups all purpose flour
1 1/2 cups whole wheat flour
2 cups packed brown sugar
2/3 cup white sugar
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 1/2 teaspoons ground cinnamon
2 cups pumpkin puree
1 cup vegetable oil
2/3 cup coconut milk
Chia seeds *optional
 
Directions:
 
Preheat the oven to 350
Grease and flour two 8x4 bread pans
Mix dry ingredients (except chia seeds) in a large mixing bowl
Add wet ingredients
Mix well but do not over mix
Pour into prepared pans
Sprinkle with chia seeds *optional
Bake at 350 for an hour or until a toothpick inserted in the center comes out clean
Remove from oven, cover with tin foil for ten minutes to steam
Turn out onto cooling rack
Tent with foil and allow to cool completely
Enjoy with someone you love!
