Oatmeal Pumpkin Raisin Cookies


My friend Sara loves anything pumpkin. She does. She told me so. I love anything pumpkin too. That's why we are kindred spirits, Sara and I and our love for pumpkin. Okay not just our love for pumpkin. We share a love for riding beach cruisers at night, visiting shanties in the woods down snow covered-candle lit paths and sleeping on the docks at Donner Lake. She introduced me to the art of spinning poi and the art of drinking Makers Mark like a lady (you lick your lips before you drink so your lip gloss doesn't come off on the glass) A true friend, a constant source of positivity, a shining light in my life no matter the miles between us.

Ingredients:
 
1 cup canned pumpkin
1 cup sugar
1 3/4 cups rolled oats
chia egg*
1 1/2 cups flour
1/2 cup vegan butter
1/4 cup applesauce
1 cup raisins
1/2 teaspoon baking soda
1/4 teaspoon nutmeg
3/4 cinnamon
1 teaspoon salt

*chia egg = 1tsp ground chia seed + 3 tbsp water
(let sit 5 -10 until it resembles an egg like consistency)


No Chia Pets were harmed in the making of this Chia Egg

Directions:

Preheat oven to 400
In a mixing bowl, stir together flour, sugar, baking soda, cinnamon, nutmeg and salt
Add and mix applesauce and butter stir until mixture is crumbly


Stir in chia mixture, pumpkin, oats, and raisins
Drop by the tablespoonful onto an ungreased cookie sheet
Bake fifteen minutes
Let cool on a wire rack
