Vegan Garlic "Alfredo" Sauce

My family loves white sauce. When we went vegan the hardest part for my kids was probably giving up the white Annies Mac and Cheese.  And ice cream. Although this sauce isn't "cheesy" it is a great creamy sauce to curb that craving. It mimics garlic alfredo sauce perfectly. Try it with roasted red peppers for a delectable dinner!


Ingredients:

14oz pasta ~any kind you like will do
5oz baby spinach
12 oz silken tofu
2 heads of garlic
1/4 c of olive oil
1 tsp salt
flax meal
bread crumbs
 
 
Directions:
Roast the garlic; cut the tops off the heads of garlic,
 drizzle oil over them, wrap them in tin foil and bake at 400 for about 30 minutes
Pop the roasted garlic out of it's skin and into a food processor with the oil, salt and tofu
Blend until creamy
Cook your pasta until al dente
Add sauce to cooked pasta
Mix in spinach
Put in a casserole dish
Top with bread crumb/flax meal mix
Put in oven at 350 for about 15 minutes
Enjoy!
