Vegan Mac n Cheese and Peas Please


This hands down is my all time favorite vegan mac and cheese recipe.

Enough said.
Ingredients:
1 16 oz bag of small pasta
3/4 cup nutritional yeast
*start with less, add more to taste (I always use 1/2 cup)
3 tablespoons Dijon mustard
2 teaspoons garlic powder
1 1/4 cups non dairy milk
1/2 teaspoon pepper
3 tablespoons extra virgin olive oil
1/2 teaspoon sea salt
1 tablespoon maple or agave syrup
1 medium sweet potato
3 cups cooked peas
Directions:
Cook the sweet potato through in microwave or oven
Cook your pasta according to directions
In a large bowl or food processor combine milk, mustard, spices, nutritional yeast, agave, salt, and oil
Blend well
Add your cooked, peeled sweet potato to sauce
Blend well
Add the sauce to the cooked pasta and mix well
Toss the cooked peas in and stir it up
Enjoy while holding on to your socks because this is sure to knock them off!
