Vegan French Toast

I'm so excited to share this recipe with you. French toast was always a go-to back when my older children were babies and we weren't yet full blown vegans. Raising our newest addition vegan has been an interesting journey. Looking for baby friendly foods which have the nutritional value she needs feels like a full time job and I'm loving every minute of it. I whipped up a batch of Vegan French Toast this morning and my little vegan baby gobbled it right down.
Made with barley milk and tahini it's a great source of protein.
Make a bunch ahead of time, freeze and put in the toaster in the morning for a quick nutritious breakfast :)
 
Ingredients:
 
3/4 cup almond, barley, rice or any non dairy milk you like!
2 tbsp tahini
1 1/2 tbsp maple syrup
1/2 tsp vanilla
2 tbsp flour
dash nutmeg
bread
oil or vegan butter for frying
 
Directions:
 
In a small bowl whisk together the milk with the tahini, maple syrup, and vanilla.
Add flour and nutmeg.
Pour into shallow bowl.
Dip bread, coat each side.
Fry in lightly oiled skillet till brown on both sides.
Enjoy!
